New Year’s Eve Dinner at Pequín Coastal Cocina
The Three-Course New Year’s Eve celebratory menu at Pequín Coastal Cocina is very special to Chef Frank Barajas since it’s the restaurant’s first New Year’s Eve festive dinner. For Starters, the choice is Farmers Market Salad with lemon vinaigrette or Poached Pear Salad with balsamic reduction. Next guests enjoy either Warm Spiced Short Rib with potato puree and roasted squash hash with a pomegranate reduction or Butternut Squash Tamales with chef’s house made walnut sauce and rice and beans.
